Chocolate Frosted Banana Cake
CHOCOLATE-SPICE ICING: Melt 4 tbsp. butter or margarine with 1 square (1 oz.) unsweetened chocolate. Stir in ¼ tsp. vanilla, ½ tsp. cinnamon and ¼ tsp. cloves. Beat in 1½ cups sifted powdered sugar alternately with 3 tbsp. half-and-half. Add more sugar or cream if needed for a good spreading consistency.

- 1/2 c. sweet butter
- 1 tsp. vanilla
- 2/3 c. sugar
- 2 eggs
- 2 1/4 c. all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 2/3 c. plain yogurt
- 1 c. mashed ripe bananas
- 1/2 c. chopped walnuts
- powdered sugar or sliced bananas, optional

Step 1
Cream butter and vanilla. Add sugar, creaming well. Beat in eggs, one at a time, until blended. In another bowl, combine flour, baking powder, baking soda and salt. Stir together yogurt and banana. Alternately add flour mixture and yogurt mixture to the butter mixture. Pour into 2 9-inch buttered cake pans. Sprinkle batter with the nuts. Bake at 350° for 30 to 35 minutes. Cool cake for 5 min. Remove from pans. Cool completely. Place layers together with the nuts in the center. Spread half the icing in the center and half on top of the cake. Sprinkle with powdered sugar, if desired, or decorate with sliced bananas.
