For awhile now we have been getting some excellent, big, sweet strawberries from CA. Just recently the local strawberry farms have been selling their berries and they are excellent also...tender and sweet. Today I made something using a very simple and easy recipe. It took me a while to figure out I couldn't make them suckers stand on end and to just lay them down gently. But if you cut a l'il bit off the bottom they will stand up for you. You don't have to cut off much and you can put the l'il cap on the top...cute too. Also if you're in a hurry...Walmart sells cheesecake in a tub like butter too. Convenient!

Ingredients

  • 4 oz soften cream cheese
  • 3 Tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 22 strawberries, whole... will really depend on size of berries
  • 1/4 cup graham cracker crumbs, crushed

Preparation

Step 1

In small mixing bowl beat together cream cheese, sugar, and vanilla extract. Hollow out each strawberry. Gently fill each strawberry with the mixture using a pastry bag or plastic baggie with corner snipped. If you have extra filling mound it on the berry. Once all berries are filled, dip each top in the crushed graham cracker crumbs. Chill in the refrigerator for 2 hours.
