Ingredients

  • all purpose flour for dusting
  • 1 cup dry bread crumbs ( i like using panko)
  • 8 oz goat cheese sliced
  • 2 eggs, lightly beaten
  • 2 tbsp olive oil
  • 2 vine ripened tomatoes sliced
  • 1 cup fresh basil leaves
  • 1 bunch arugula trimmed
  • Dressing
  • 1/4 cup olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp superfine sugar

Preparation

Step 1

Dressing - place oil and vinegar and sugar in a bowl and stir to combine. Set aside

Place the flour and bread crumbs on separate plates. One at a time press the goat cheese slices into the flour, then dip into egg and press into bread crumbs, turning to coat.

Heat the oil in a large non-stick frying pan over high heat. Cook the cheese slices for 1 - 2 minutes on each side or until golden and crispy.

Layer the cheese, tomatoes, basil and arugula on each of the 4 plates and drizzle the balsamic dressing over the top and serve.
