Ingredients
- 2 1/4 cups flour
- 1 1/2 tea. baking powder
- 1/2 tea. cinnamon
- 1/2 tea. salt
- 1 eggs
- 3/4 cup milk
- 2/3 cup vegetable oil
- 1 1/4 cup sugar
- 1 tea. vanilla
- 1 cup blueberries

Step 1
Preheat oven to 375 degrees. Mist 2 - 24 cup mini muffin tins with cooking spray.
In a small bowl, mix flour, baking powder, cinnamon and salt.
In a separate bowl, whisk eggs, milk, oil, sugar and vanilla. Stir flour mixture into milk mixture. Fold in berries. Spoon batter into muffin cups until 3/4 full.
Bake until toothpick inserted comes out clean, 15-20 minutes.
Let cool in pans on wire racks for 5 minutes, then turn muffins out onto racks.
Serve muffins warm or at room temperature.
