- Bacon
- 1/2 head cabbage
- olive oil
- Red onion
- Spinach
- Balsamic vinegar

Step 1
Cook bacon in a skillet; set aside. Add a sliced red onion to the skillet. Cook over med heat to caramelize, about 5 mins; set aside. Add a little more oil and half a head of sliced cabbage; cook about 8 mins. Add several handfuls spinach; cook 2 mins more. Return onion to skillet. Drizzle with balsamic vinegar and sprinkle with crumbled bacon.
