Ingredients

  • For the soup:
  • 1 pound boneless-skinless chicken breasts, cut into bite size pieces
  • 2 tablespoons olive oil
  • 1 large white onion, diced
  • 4 medium carrots, peeled, thinly sliced into circles
  • 3 medium ribs celery, thinly sliced
  • 1 large Idaho potato, peeled and diced
  • 1 heaping cup fresh or frozen corn kernels
  • 1 1/2 cups of crushed tomatoes
  • 1 sprig each parsley, sage & oregano, tied into a sachet (optional)
  • 1 cup any kind of small pasta
  • Salt & pepper to taste

Directions:

. (If you're short on time, you can buy pre-made chicken stock, about 32 oz.).
Chicken Soup:

1.Heat a deep pot over medium-high. Add olive oil and sauté the onions and chicken breast. Season with salt and pepper to taste. Reduce heat to medium. When onions are soft and chicken takes on color, add the reserved broth, carrots, celery, potato, corn, crushed tomatoes, herb sachet (optional), 2 tablespoons salt and a large pinch of black pepper. Bring to a simmer and cook low for an additional 45 minutes.
2.Add pasta and cook for an additional 6 minutes. Taste and correct seasoning if needed.
3.Serve.
