Ingredients

  • 2 1/2 c. flour
  • 2 tsp. cinnamon
  • 1 tsp. each of baking powder and baking soda
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 c. butter, softened
  • 1 1/2 c. sugar
  • 1 egg
  • 1 c. canned pumpkin (not pie filling)
  • 1 tsp. vanilla
  • 1 c. pecans, chopped

Preparation

Step 1

Mix together flour, cinnamon, baking powder, baking soda, nutmeg and salt. Set aside.

In another bowl, cream together butter and sugar until fluffy. Add egg and mix. Beat in pumpkin and vanilla. Gradually stir in flour mixture until well blended. Fold in nuts. Refrigerate for 10 minutes.

Scoop dough onto greased baking sheets and bake for 12 minutes at 350 degrees. Let cool on wire racks.
