  • Garnish:
  • 1 tbsp vegetable oil
  • 4 links Aidells Habanero & Green Chile Sausage, diced
  • 1 onion, chopped
  • 2 tsp chopped garlic
  • 3 cups chicken stock
  • 1 15-ounce can chopped tomatoes
  • 1 cup corn kernels (thawed if frozen)
  • Juice of 3 limes
  • Salt and freshly ground black pepper to taste
  • 3 cups corn chips
  • 2 cups jack cheese, grated
  • 1/4 cup chopped fresh cilantro

Step 1

Heat the oil in a large saucepan or a soup pot over medium heat. Add the onion and cook 5-7 minutes, until translucent and soft. Add the garlic and saute one minute more. Pour in the stock and tomatoes. Bring to a boil, then reduce heat to a simmer. Add the corn and lime juice and simmer until heated through, about 2-3 minutes. Season to taste with salt and pepper.
