Ingredients

  • 1 pkg. shredded potatoes (refrigerated kind)
  • 3 eggs, beaten
  • 1/2 cup shredded cheddar
  • 1/4 cup finely chopped onion
  • 1/4 tea. garlic powder
  • salt and pepper

Preparation

Step 1

Preheat oven to 350 degrees. Grease mini muffin pan.

Pour potatoes into a bowl, add salt, pepper, garlic powder and onion, stir to combine. Pour in egg, stir and then mix in cheese.

Spoon into mini muffin cups.

Bake 20-25 minutes or until golden brown and edges are crispy.
