Ingredients
- 1/2 cup butter
- 6 large yellow onions, thinly sliced
- 1 tablespoon sugar
- 2 tablespoons all-purpose flour
- 3 (14.5-ounce) cans beef broth
- 1 (10.5-ounce) can beef consommé
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Thyme Croutons
- Shredded Gruyére cheese

Instructions
In a Dutch oven, melt butter over medium heat; add onions and sugar. Cook, stirring often, for 45 minutes, or until golden brown.
Stir in flour and cook for 2 minutes. Add broth, beef consommé, thyme, salt, and pepper; bring to a boil. Reduce heat and simmer for 30 minutes. Prehear broiler.
Ladle into 6 ovenproof bowls; top with croutons and shredded cheese. Broil 6 inches from heat for 3 minutes, or until cheese is brown and bubbly. Serve immediately
