Ingredients

  • 1 1/4 pounds ground beef chuck
  • 1 cup bourbon
  • 4 garlic cloves, minced
  • 1 tsp. dried oregano
  • 1/2 tsp. dried sage
  • 3 Tbsp. olive oil
  • 1 medium yellow onion, chopped
  • 3 bell peppers (red, green and orange) seeded and chopped
  • 1/2 jalapeño pepper, seeded and chopped
  • 1/4 cup orange juice
  • 1/2 stick butter
  • 1 Tbsp. chili powder
  • 1/2 tsp. ground chipotle pepper
  • 1/4 tsp. salt
  • 1 (28-oz) can crushed tomatoes
  • 1 (15.5 oz) can black eyes peas, drained and rinsed
  • 1/4 cup sour cream
  • 3 fresh mint leaves, finely copped
  • 4 Ounces shredded Cheddar
  • Tortilla chips

Preparation

Step 1

1. Cook beef, bourbon, half of the garlic, oregano and sage until browned. Drain.

2. Heat oil, add onion, bell peppers, jalapeño, orange juice, butter and remaining garlic. Cook for about 10 minutes. Add chili powder, chipotle, cayenne pepper and salt. Cook for one minute. Add remaining bourbon; reduce heat to medium and cook until liquid is reduced by half, about 8 minutes.

3. Add tomatoes and bring to a boil. Add beans and beef. Simmer on low for one hour. Before serving, site together sour cream and mint in small bowl. Garnish with Cheddar cheese and sour cream mixture. Serve with tortilla chips.
