COOKIES - Chocolate Coffee Cream Fancies 1 Picture

Ingredients

  • Cookies:
  • 60 g Unsalted butter
  • 1 tsp Coffee extract*
  • 1 tsp Milk
  • 2 1/2 tbsp Caster sugar
  • A pinch of salt
  • 100 g Plain flour
  • Coffee cream:
  • 200 g Icing sugar, sifted
  • 2 tsp Vegetable oil
  • 1/4 tsp Coffee extract*
  • 1-3 tbsp Milk
  • 60 g Dark chocolate, melted
  • If you don't have Coffee extract use instant coffee + boiling water instead.

Preparation

Step 1

Make the cookies:
Beat butter, coffee extract, milk, salt and caster sugar until light and fluffy.
Stir in flour, the dough will be firm.
Cover and refrigerate for 30 minutes.

Preheat the oven to 180°C.
Line the baking sheet with non-stick baking paper, or silpat.
Roll the dough until 3mm thick.
Cut the dough into 3.5cm rounds, and place in the prepared baking sheet.
Bake for 8-10 minutes or until colored, stand the cookies on the baking sheet 5 minutes before transferring to wire racks.

Make the coffee cream:
Mix all the ingredients together add enough milk until the cream is spreadable.
Spread the coffee cream over the cookies, stand on wire racks until set.
Pipe melted chocolate over the cookies.
