Ingredients
- Citrus-Herb Dressing:
- For an extra touch of flavor, top this dish with long curls of Parmesan cheese, created using a vegetable peeler.
- 1 1/2 lbs. medium zucchini
- 1/2 tsp. salt
- 1 garlic clove, minced
- 1 Tb. olive oil
- 3 Tb. chopped fresh basil
- 1 Tb. chopped fresh thyme
- 3 Tb. fresh orange juice
- 2 Tb. fresh lemon juice
- 1 Tb. olive oil
- 1 tsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. pepper

Preparation
Step 1
1. Cut zucchini in half lengthwise, and cut into 2 1/2" long, thin pieces. Sprinkle with salt.
2. Cook garlic in hot oil in a skillet over medium-high heat, stirring constantly, 1 minute or until lightly browned. Add zucchini, and cook, stirring occasionally, 8-10 minutes or until tender.
