Ingredients

  • Citrus-Herb Dressing:
  • For an extra touch of flavor, top this dish with long curls of Parmesan cheese, created using a vegetable peeler.
  • 1 1/2 lbs. medium zucchini
  • 1/2 tsp. salt
  • 1 garlic clove, minced
  • 1 Tb. olive oil
  • 3 Tb. chopped fresh basil
  • 1 Tb. chopped fresh thyme
  • 3 Tb. fresh orange juice
  • 2 Tb. fresh lemon juice
  • 1 Tb. olive oil
  • 1 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

1. Cut zucchini in half lengthwise, and cut into 2 1/2" long, thin pieces. Sprinkle with salt.

2. Cook garlic in hot oil in a skillet over medium-high heat, stirring constantly, 1 minute or until lightly browned. Add zucchini, and cook, stirring occasionally, 8-10 minutes or until tender.
