- 2 1/2 cup flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 medium eggs, beaten
- 1 1/4 cup brown sugar
- 1 cup pureed cooked pumpkin
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 1/2 cup Wheat Chex or similar breakfast cereal
- 3/4 cup raisins, coarsely chopped

Preparation
Step 1
Directions:
Preheat oven to 350°F.
In a large bowl, sift together flour, baking powder, salt, baking soda, cinnamon, and nutmeg.
In a separate medium bowl, combine eggs, sugar, pumpkin, milk, oil and vanilla; whisk until smooth. Add to flour mixture and stir until mixed. Gently stir in cereal and raisins.
Transfer to a lightly greased bread pan. Bake 60 minutes, until an inserted toothpick comes out clean. Remove from oven, cool 15 minutes, and remove from pan to cool completely.
