Ingredients
- 3 C. cooked white rice
- 2 chicken breasts, in strips then in half
- 2 8oz. pkgs. sliced white mushrooms
- 15 About 15 baby carrots, sliced thin
- 7-8 scallions, chopped
- 2 cooked egg whites (optional)
- 2 cloves garlic, chopped
- Olive oil
- Low sodium soy sauce
- Sesame oil

Preparation
Step 1
1. Put olive oil in pan to cover bottom. Add garlic, cook for about 2-3 minutes to flavor oil.
2. Add chicken & mushrooms. Cook about 10 minutes, until chicken is almost done. Add rice, carrots, egg whites and soy. Stir well until rice is brown.
3. Add scallions, stir. Add sesame oil in small amounts until desired flavor is reached.
