Ingredients

  • 2 large eggplants
  • 2/3 cup vinegar.less 1 Tbs
  • 1/3 cup water
  • 2/3 cup sugar,less 1 Tbs
  • 4 cloves garlic,2 tsp minced garlic
  • oil for frying

Step 1

Wash the eggplants well and slice them thin.Place the eggplant slices in a large bowl and salt well. Let the "sweat" a minimum of 20 min to overnight. This removes most of the bitter juices. Wash well and pat dry. Fry the eggplant slices on med. flame on both sides for 6-9 min until the slices are brown/black.(they will resemble dark brown potato chips) Mix well with remaining ing. The eggplant will fall apart as you mix. Refrigerate.
