Ingredients
- 1/2 kg aubergine
- 4 tomatoes
- 1/2 tbsp fresh parsely, finely chopped
- 1/2 tbsp fresh coriander, finely chopped
- 1 tsp ground cumin
- 1 tsp ground paprika
- pinch of ground chili pepper
- 1/2 tsp salt
- 4 cloves garlic, crushed
- 4 tbsp olive oil
- 1 tbsp vinegar
- vegetable oil

Step 1
Wash the aubergines and remove 4 strips of the skin lengthways. Cut the aubergines into 2 cm slices and place the in water with salt. Peel and chop tomatoes. Place the tomatoes in a pan with parsley and coriander, spices, salt, olive oil, and simmer until dry. Drain aubergines well and fry in oil until golden. Puree the aubergines and add them to the tomatoes. Ass the vinegar and simmer 5 minutes.
