This dish has some heat to it, so if you want it milder, substitute any of the ingredients with the non-seasoned version to suit your taste.

- 2/3 C Southwest Style Shredded Hashbrowns
- 3 T. Southwestern Style Egg Beaters
- 1 wedge Laughing Cow Queso Fresco & Chipotle cheese

Step 1
Heat small pan on medium and spray with non-stick cooking spray.
Add hash browns and cook until browned, turning over as needed.
Once browned, add Egg Beaters and scramble until mostly set.
Take the pan off the burner and add the Laughing Cow cheese wedge, using your spatula to break it up until it is melty.
Can be topped with salsa, but is good as is.
