Ingredients
- 2 cups water
- 1 cup long grain white rice
- 1/2 teaspoon salt
- 1 onion, chopped
- 1 tablespoon olive oil
- 1 cup frozen green peas, thawed
- 1 lb. cooked shrimp
- 1 1/2 cups cooked chicken, diced
- 1/2 cup chopped parsley
- Salt and pepper
- 14.5 oz. can stewed tomatoes

Preparation
Step 1
In a large saucepan, bring 2 cups water to a boil. Add rice and salt. Cover and simmer for 20 minutes or until rice is tender. In a skllet, saute onion in olive oil until soft. Combine rice, onion, peas, shrimp, chicken and chopped parsley. Add stewed tomatoes and salt and pepper.
