Step 1
Rinse and sort beans. Add rinsed beans to water. Bring water to a rapid boil, and boil for 2 minutes. Remove from heat. Cover and let stand 1 hour. Drain soak water and rinse beans.
To Cook: Add rinsed beans to 3 cups of water. Simmer gently with a lid until desired tenderness is reached--about 1-2 hours. Salt and pepper to taste. Can add additional pork, ham or bacon for additional flavor.
