Chickpea Detox Salad
This crunchy salad is one of Joy McCarthy's favourites. It's so quick and easy to make and keeps in the fridge for at least a week. The fiber and phytonutrients make this an ideal detox meal. Chickpeas are a natural appetite suppressant too!

Ingredients
- 1 can Garbanzo Beans (Chickpeas) , drained and rinsed
- 1 small red onion, thinly sliced
- 5 stalks celery, cut into bite-sized pieces
- 1 sweet red pepper, cut into bit sized pieces
- 1/4 cup cilantro, chopped
- 1 or 2 cloves of garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup extra-virgin olive oil
- 1/2 tsp sea salt
- 1/2 tsp cayenne pepper

Step 1
Combine all ingredients in a large bowl; toss well. Let sit for an hour so the flavors can mingle.
