Caramel Apple Cake

Ingredients
- 1 1/2 cups vegetable oil
- 3 eggs
- 2 cups sugar
- 2 tsp. vanilla
- 3 cups flour
- 1 tsp. soda
- 1 tsp. salt
- 1 1/2 cups chopped pecans
- 3 cups peeled, diced apples

Preparation
Step 1
Combine oil, eggs, sugar and vanilla. Mix until well blended. Combine flour, soda and salt and add to egg mixture. Beat with mixer until completely blended. Fold in apples and pecans. Batter will be quite stiff. Spoon batter into well greased and floured Bundt pan.
Bake at 350 degrees for 1 hour and 20 minutes. Leave cake in pan until completely cool, then invert onto cake plate. Top with caramel topping (Below).
Makes 12-16 servings.

1/2 cup packed brown sugar
1/4 cup milk
1/2 cup butter
Mix all ingredients and bring to a slow rolling boil. Cook for 3 minutes. Let sauce rest for 5 minutes. Drizzle over cake.
