Ingredients
- 1 lb. dried lima beans
- 1 lb. bulk sausage
- 1 onion, chopped
- 1/2 green pepper, chopped
- 1/2 cup chopped celery
- 1 (15 oz.) can tomato sauce
- 2 tbsp. brown sugar
- 1 1/2 tsp. salt
- 1 tsp. chili powder
- 1/8 tsp. cayenne pepper

Step 1
Sort and wash beans. Cover with water, and bring to a boil; boil 2 minutes. Remove from heat, and let stand 1 hour. Return to a boil; cover, reduce heat, and simmer until almost tender (about 1 hour).
Brown sausage in a skillet; add onion, green pepper, and celery. Saute until vegetables are tender. Add meat mixture and remaining ingredients. Continue cooking until beans are tender, adding water if necessary.
Yield: 8-10 servings.
