Ingredients

  • Vinaigrette:

  • 2

    T plus 2 t olive oil

  • 2

    T lemon juice

  • 1

    T pomegranate molasses

  • 2

    t ground sumac

  • 1

    clove garlic, minced

  • Salad:

  • 1

    medium head romaine, halved and sliced into ½ inch ribbons

  • 2

    C cherry tomatoes, halved

  • 4

    small Persian cukes, diced

  • 1

    small red bell pepper, diced

  • 1

    small yellow bell pepper, diced

  • 3

    green onions, thinly sliced

  • c coarsely chopped parsley

  • 3

    T thinly sliced mint leaves

  • c plain pita chips, coarsely broken up

  • ½

    c feta

Directions

To make vinaigrette, whisk together all ingredients in a small bowl. to make salad, toss together everything but pita and feta. Add vinaigrette and season with salt and pepper. Sprinle pita and feta over top and toss.
