Ingredients
- 1-1/2 LBS small red-skinned potatoes, cut into 1/2" thick slices
- 3 TBL olive oil
- 1/2 C shredded Parmesan
- 1/4 C each dry bread crumbs & minced fresh parsley

Preparation
Step 1
PREHEAT oven to 375 w/ baking sheet inside
TOSS potatoes w/ oil in bowl
Combine Parmesan, bread crumbs & parsley
toss mixture gently w/ potatoes until coated
ARRANGE potatoes on preheated baking sheet
bake until potatoes are tender, 30-35 min
