Sweet Potato Puff

Ingredients

• 3 cups cooked and mashed sweet potatoes (about 4 medium-sized potatoes)
• 3 tablespoons butter
• 3/4 cup milk
• Dash of pepper
• 2 eggs, separated
• 1/4 teaspoon salt

Preparation

Step 1

Preheat the oven to 375 degree.

In large bowl, whip cooked potatoes with butter, milk, and pepper. Beat in egg yolks.

In small bowl, whip egg whites with salt until stiff; fold into potato mixture.

Place in greased 1 1/2-quart casserole dish and bake for 30 minutes or until top is lightly browned.

Notes:
This is best served right from oven.
