Ingredients

  • CRUST:
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1/4 cup cold water
  • ......................................
  • FILLING:
  • 5 large tart apples, peeled and thinly sliced
  • 2/3 cup sugar
  • 5 teaspoons all-purpose flour
  • 1 1/4 teaspoons ground cinnamon
  • ......................................
  • TOPPING:
  • 2/3 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup cold butter

Preparation

Step 1

In a large bowl, combine flour and salt; cut in the shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Wrap in plastic wrap. Refrigerate for 1 to 1-1/2 hours or until easy to handle.

Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges.

For filling, place apples in crust. Combine the sugar, flour and cinnamon; sprinkle over apples.

For topping, combine flour and sugar in a small bowl; cut in butter until crumbly. Sprinkle over filling. Bake at 450° for 10 minutes. Reduce heat to 350°; bake 50-60 minutes longer or until topping is golden brown and filling is bubbly. Cool on a wire rack. Yield: 8 servings.

This is a fantastic pie! It is very sweet, so as other reviewers have written, use tart apples. I made this pie following the recipe exactly and my family loved it.

My daughter's friends and teacher loved this pie. I thought it a bit too sweet but that's just me. I did have a problem with the crust browning too quickly so next time I'll reduce the initial cooking temp. Think it is a problem with my oven though.

Such a simple recipe, such delicious results! This is the best apple pie I've had. A couple of hints:Make sure you use tart apples - Granny Smiths do really well in this recipe. Mound the apples up in your crust. It will sink down when it cooks in the oven. It also helps to put a piece of foil beneath the pie in the oven to avoid bubble over in your oven!

I make standard apple pies all the time but I thought i'd try something a little different. This was delicious and my husband and toddler loved it. I used a store bought pie crust because I just won't make one when the store bought ones work wonderfully. I did use apple pie spice along with the cinnamon because I like it that way but otherwise I followed the instructions exactly. I only needed 4 large apples. I will be making this again soon and its going into my "regularly used" recipe book

I've never made an apple pie before and have always wanted to. The first time I came across this recipe in the magazine I knew I wanted to make this pie. I just wanted to wait for the right time. So yesterday we had our first cold snap and I had a huge basket of apples and felt I had my opportunity. I was nervous about making the pie crust because me and pie crusts don't get along. Usually I opt for the Pillsbury dough boy. So I lovingly set about to make this pie. It is the best pie ever. I can't say that enough. The pie crust turned out perfectly. I did substitute butter for the shortening in the pie crust since I didn't have any. I was so proud of my achievement in my first apple pie. My picky husband loved it. I will definitely be making this again. So thank you Mrs.Olson for this wonderful pie recipe. It really is a gift.

This is a great recipe and is very easy to follow. I love the crumb topping. No wonder she makes so many over the holidays!! The only thing I did differently was add some lemon juice to the apples. This is what my dad always did and I love slight tang that it gives to the apples. I will be making this recipe many times over the holidays!

This was the first apple pie I made completely from scratch (no store-bought crust). It was very easy and delicious!

I liked this but cut the apples to 4 instead of 5 because I think it would have overflowed. Maybe it was my oven, but I also would reduce the amount of topping if I make this again. The topping didn't brown evenly, and I ended up scraping some of it off. I did use prepared crust, so maybe that had something to do with it as well. It was still good.

This is a fantastic recipe. The entire family loved it and the pie only lasted 2 evenings. This recipe is very similar to my grandmother's pie recipe. Making another one tomorrow. I did cheat and use a Pillsbury pie crust. You'd never know the difference.
