Ingredients
- 4 ears of corn, husks removed, smoked for 30 minutes using apple wood chips, then kernels removed from the cob
- 1 red bell pepper, finely diced
- 1 green bell pepper, finely diced
- 1 small red onion, finely diced
- 2 medium tomatoes, diced
- 1 tablespoon cilantro, chopped
- 1 jalapeño, finely diced
- 1 teaspoon salt
- 1/2 teaspoon black ground pepper
- 1 lime, juiced
- 1/2 teaspoon cumin powder
