Ingredients

  • 3 Green onions, chopped
  • 3 Stalks Celery, chopped
  • 2 Carrots, grated
  • 1/4 Cup Butter
  • 3 Potatoes,(small) chopped small
  • 2 Cans Chicken broth, (10 3/4 ounce size cans)
  • 3 Cans Condensed potato soup, (10 3/4 ounce size cans)
  • 8 Ounces Cheddar cheese, grated fine
  • 1 Tablespoon Dried parsley flakes
  • 1/8 Teaspoon Tabasco sauce
  • Salt and Pepper to taste
  • 8 Ounces Sour Cream
  • 3 Tablespoons Sherry (Optional)

Preparation

Step 1

Directions

In a large soup pan, saute green onion, celery and carrots in butter for 5 minutes.
Add potatoes & chicken broth and simmer 30 minutes.
Add potato soup, cheese, parsley flakes, salt, pepper and Tabasco sauce.
Stir in sour cream and simmer 15 minutes.
Add sherry when ready to serve; stir.
