Ingredients
- 3/4 cup finely-chopped onion
- 3/4 cup finely-chopped green bell pepper
- 5 jalapeños stemmed, seeded, and minced
- 2 tablespoons minced garlic
- 1/4 cup olive oil
- 16 ounces beer
- 1 quart water
- 1 cup prepared mustard
- 1/2 cup brown sugar
- 1/2 cup Worcestershire sauce
- 1/2 cup Louisiana-style hot sauce
- 3/4 cup cider vinegar
- 3 teaspoons coarsely-ground black pepper
- 1 teaspoon ground New Mexican chile
- Salt to taste

Preparation
Step 1
In a large saucepan, saute the onion, bell pepper, jalapeños and garlic in oil until soft. Add the beer and the water; bring to a boil and reduce the heat.
Stir in the remaining ingredients and simmer for an hour, stirring occasionally, until thickened.
For a smooth sauce, place the mixture in a blender or food processor and puree until smooth.
This recipe yields 2 quarts.
