Ingredients

  • 3/4 cup finely-chopped onion
  • 3/4 cup finely-chopped green bell pepper
  • 5 jalapeños stemmed, seeded, and minced
  • 2 tablespoons minced garlic
  • 1/4 cup olive oil
  • 16 ounces beer
  • 1 quart water
  • 1 cup prepared mustard
  • 1/2 cup brown sugar
  • 1/2 cup Worcestershire sauce
  • 1/2 cup Louisiana-style hot sauce
  • 3/4 cup cider vinegar
  • 3 teaspoons coarsely-ground black pepper
  • 1 teaspoon ground New Mexican chile
  • Salt to taste

Preparation

Step 1

In a large saucepan, saute the onion, bell pepper, jalapeños and garlic in oil until soft. Add the beer and the water; bring to a boil and reduce the heat.

Stir in the remaining ingredients and simmer for an hour, stirring occasionally, until thickened.

For a smooth sauce, place the mixture in a blender or food processor and puree until smooth.

This recipe yields 2 quarts.
