These were great. I really liked them. Dan ate his but maybe wasn't as fond of them as I was. Still, nice easy side dish.

ONIONS****Crispy Panko-Topped Onions 1 Picture

Ingredients

  • 1 medium uncooked onion, peeled, cut in half
  • salt and freshly ground black pepper to taste
  • 4 tbsp. panko
  • 2 tbsp. freshly grated parmigiano reggiano (or 1 tablespoon pre-grated)
  • 1/2 Tbsp EVOO
  • 1 tsp fresh thyme, chopped

Preparation

Step 1

* Preheat oven to 400°F. Line a 9- X 13-inch baking pan with aluminum foil and coat lightly with olive oil.

* Sprinkle onions with salt and pepper. Place onions, cut-side down, on prepared baking pan and sprinkle again with salt and pepper. Bake until onions are light golden and slightly softened, about 40 minutes.

* Meanwhile, in a small bowl, combine panko, cheese, olive oil, thyme, and salt and pepper.

* Remove onions from oven and turn over; sprinkle evenly with crumbs. Bake until onions are tender and crumbs are golden, about 25 to 30 minutes.
