Souped up Chicken and Rice

Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
- 2 cups water
- 1 (10 3/4-ounce) can condensed cream of chicken soup
- 1 (4-ounce) can mushroom stems and pieces, drained
- 1 cup long- or whole-grain rice
- 1 (1-ounce) envelope onion soup mix

Preparation
Step 1
Preheat oven to 350 degree. Coat 9x13" baking dish with cooking spray.
In large bowl, combine all ingredients; mix well then spoon into prepared baking dish.
Cover tightly with aluminum foil and bake 1 to 1-1/4 hours, or until rice is tender and no pink remains in chicken.
Notes:
For little color and whole lot of flavor, sometimes I sprinkle some shredded sharp Cheddar cheese over top before serving.
