Grilled Asparagus

Ingredients
- 32 thick asparagus spears, trimmed
- 6 Tbsp olive oil
- 1/2 tsp kosher salt, or to taste
- 1/4 tsp pepper, or to taste
- 3-5 Tbsp lemon juice
- 2-3 Tbsp fresh parmesan cheese, grated or shaved
- 2 hard boiled eggs, chopped (optional)

Step 1
1. Toss asparagus in 2 tsp of olive oil, salt and pepper lightly.
2. Grill asparagus over medium heat for 5 - 7 minutes, turning the spears
until the skin is slightly charred all over or broil the stalks in the
rack of broiler pan, 4 - 5 inches from the heat for 5 - 7 minutes, or
until asparagus is crisp and tender, turning once halfway thru. The
asparagus should feel soft in the center of the thickest part.
3. Transfer the asparagus to a platter. Drizzle remaining 4 Tbsp of olive
oil and squeeze the lemon juice over the stalks. Sprinkle cheese and
eggs over the top, serve right away.
