The key is to start off with a HOT, HOT oven.

Bake that bird at 425º for the first 40-50 min. This gives the skin a golden brown texture you simply can't beat! During this first cook, RELIGIOUSLY baste the bird every 10 minutes. For your first 10 min. baste, use a brush to generously coat the bird with egg-white, the second basting should also be egg-white. The remaining bastings should be melted butter. EVERY 10 MINUTES.

After this initial cooking, you will have juices in the bottom of your roasting pan. Use these for your 'low temp' (around 350º)bastings, every 15 minutes or so. Add an additional 20 minutes to your overall cooking time, and if possible, use a thermometer to ensure that it's all good & cooked.
