Ingredients
- 1 lb cod fillets, cut into cubes
- 1/4 cup butter
- 1/4 cup flour
- 1 1/4 cups milk
- 1 tsp. salt
- Pepper to taste
- 1 small onion, finely chopped
- 1/2 cup breadcrumbs or cracker crumbs
- 1/2 cup cheddar cheese, grated
- Low Fat Version of White Sauce
- Ingredients
- 6 tablespoons flour
- 3 cups low-fat milk ( 1%)
- 1/4 teaspoon ground nutmeg
- 1/3 cup parmesan cheese, grated
- 1/4 cup egg substitute
- 1 teaspoon butter
- Directions
- In a heavy medium saucepan, whisk flour to remove any lumps.
- Gradually add 1 cup milk whisking until smooth.
- Add remaining 2 cups of milk and nutmeg.
- Cook over medium heat, whisking constantly, about 10 minutes, until mixture thickens and boils.
- Remove from heat.
- Whisk a little of the mixture into the egg substitute.
- Add egg substitute, Parmesan and butter to the white sauce mixture, whisking constantly.
- Season to taste.
- Can be made ahead, covered and refrigerated.
- Reheat before using.

Step 1
Preheat oven to 375*.
Place cod in greased gratin dish or individual gratin dishes.
In heavy saucepan, melt butter; stir in flour until smooth and remove from heat.
Gradually stir in ½ the milk. Return to heat, and beat until smooth and shiny. Gradually add remaining milk, salt, pepper and onion. Cook, stirring , until smooth and thickened
Pour over fish and sprinkle with breadcrumbs and cheese.
Bake at 375* for 15-30 minutes until the sauce bubbles and the fish is cooked.
