Ingredients
- For Gnudi:
- 1 cup ricotta
- 1/2 cup Parmigiano-Reggiano, grated with microplane
- 2 eggs
- 1/2 cup all-purpose flour
- 1 T salt
- For sauce:
- 1 cup unsalted butter, browned
- 2 T chopped pistachios
- 1/3 cup picked arugula

Preparation
Step 1
In a food processor, mix cheese, eggs, ricotta and salt. Place in a bowl and stir in flour. Allow to chill for 20 minutes. Roll into 2 oz. balls and shape gnudi with floured hands. In salted boiling water, drop gnudi and allow to cook for 3-4 minutes until they float. Remove with a slotted spoon and place in bowls. Top with brown butter and pistachios. Arrange arugula around and sprinkle with a bit more cheese.
