Ingredients

  • Aluminum foil wrap
  • 4 cod fillets
  • 1 (16-oz.) package frozen stir-fry vegetables
  • Black pepper, to taste
  • 1 to 2 whole lemons, juiced (depending on how lemony you like it)
  • 1 teaspoon dried rosemary
  • 1 cup no salt added tomato juice
  • 3 tablespoons grated Parmesan cheese

Preparation

Step 1

Preheat oven to 400 degrees. Line a metal baking pan with aluminum foil wrap. Place cod in the pan and cover with the vegetables; season with pepper, drizzle with lemon juice and sprinkle with rosemary. Pour tomato juice over all. Bake for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with the Parmesan cheese during the last five minutes of cooking time.

SERVING SUGGESTION: Whole wheat couscous, steamed green beans and a salad tossed with Easy Balsamic Vinaigrette (see recipe).
GLUTEN FREE: Make sure tomato juice is gluten free.
