Ingredients
- 1 cup flour
- salt
- 1 egg
- 1 egg yolk (reserve white)
- 60 g melted butter
- 1 cup beer

Step 1
Sift flour and a pinch of salt into a bowl Make well iin centre. eat egg with egg yolk and add to flour with melted butter.
Stir gradually incorporating flour and adding beer a little at a time until smooth.
Cover and stand for 1 hour. Whisk eggwhite until stiff and fold gently into batter.
Best for fish pieces, fitters and potato wedges.
