Ingredients

  • Dough:
  • 1 cup butter
  • 2 cup flour
  • 6 oz cream cheese, room temp
  • Filling:
  • 1 cup pecans,chopped
  • 1 1/2 cup brown sugar
  • 2 eggs, beaten
  • 2 T. melted butter
  • 1 tsp vanilla
  • dash of salt
  • Powdered sugar

Preparation

Step 1

Gease and flour 48 mini muffin tin and preheat oven to 350. With electric mixer, mix all dough ingredients well. Form into 4 equal size balls and cover well with plastic wrap and put in refrigerator for 1/2 hour. In the meantime, mix together all the filling ingredients, set aside. Take out one ball at a time and divide into 12 small balls. Put each ball in muffin pan and form into sides and bottom making a little cup. Fill each cup with filling about 1/2 - 3/4 full. Repeat with remaining dough. Bake for 25 minutes until golden brown. Use sharp knife to loosen cups and take out of tin to cool. Sprinkle with powdered sugar.
