  • 3 large eggs
  • 1 1/2 cups (one can) evaporated milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 lb white egg bread, such as challah or Hawaiian bread, preferable day-old

Step 1

In a 9-by-13-inch baking dish, whisk together the eggs, milk, butter, vanilla, cinnamon, and salt.

Preheat oven to 200F. Heat large nonstick skillet on stove and melt coconut oil and butter in pan.

Cut the bread evenly into 1/2-inch slices. Dip each piece of bread in the egg mixture, letting it stand until it is saturated but not so soft that it falls apart, about 30 seconds per side. Place in pan and cook until golden brown on each side. Place on a baking sheet in a single layer in a 200°F oven for up to 20 minutes before serving. Top with pats of butter and drizzle with maple syrup.

Note: Dry bread soaks up the batter better than fresh bread and its lack of moisture helps prevent the pieces from falling apart when they are soaked. You can slice fresh bread, spread it out on baking sheets, and leave it at room temperature overnight to dry out.
