Ingredients

  • `/4 c water
  • 1/2 c sugar
  • 1/2 tsp grated lemon peel
  • 2 C fresh blueberries
  • 1 Tbsp fresh lemon juice
  • 1 C whipping cream
  • 2 Tbsp honey
  • 6 slices Artisan Fresh Slice Pound Cake (or angel food cake)

Preparation

Step 1

Bring water, sugar and lemon zest to a boil in a medium saucepan
over medium-high heat. Stir in blueberries and simmer about 5 min
or until blueberries begin to open, stirring occasionally. Remove
from heat, stir in lemon juice.

Refrigerate for 1 hour.

Whip cream with honey to form soft peaks.

For each serving, place w cake slices onto dessert plate.
Top cake with blueberry compote and whipped cream.
