Ingredients

  • Cake:
  • 1/2 C shortening2 C sugar2 eggs1 1/2 C mashed ripe bananas (about 3)
  • 3 t vanilla
  • 3 C flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 1 C buttermilk
  • 4 squares (1 oz each) white baking chocolate, melted and cooled.
  • Cream Cheese Frosting:
  • 1 pkg (8 oz) cream cheese, softened
  • 3/4 C butter
  • 1 t vanilla
  • 5 C p sugar
  • 1/2 C finely chopped pecans (if desired)

Preparation

Step 1

1. Cream shortening and sugar. Add eggs, one at a time, beating well after each. Beat in bananas and vanilla. Combine flour, b powder, b soda and salt. Add to creamed mixture alternately with buttermilk. Fold in melted chocolate.
2. Pour into 3 greased and floured 9 in round baking pans.
3. Bake at 350 for 25-3- min or til toothpick comes out clean. Cool for 10 min then remove from pans to rack to cool completely.
4. For frosting: Beat cream cheese, butter and vanilla til smooth. Beat in p sugar. Spread between layers and over top and sides of cake. Sprinkle with pecans.
