Wedge Salad w/ Blue Cheese Dressing 1 Picture

Ingredients

  • 3 heads of Romaine
  • 1 lb bacon, cooked and crumbled
  • 3 tomatoes, chopped
  • Dressing
  • 1/2 cup mayo
  • 1 cup sour cream
  • 6 oz. crumbled blue or gorgonzola cheese and more if desired to crumble over salad
  • 1 T. lemon juice
  • 2 T. fresh chives, chopped
  • 1/4 cup olive oil
  • salt and pepper

Preparation

Step 1

Cut romaine heads in half keeping the core in tact. Brush with olive oil and salt and pepper. Scorch on hot grill for a few minutes - you just want to get the grill marks but not wilt. Put on individual salad plate, put the crumbled bacon, tomatoes and more cheese if desired over romaine and drizzle with the dressing.
