Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla
  • 1 cup vegetable oil
  • 2 cups peeled and shredded zucchini
  • 8 ounce can crushed pineapple, drained
  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 3/4 cup chopped pecans

Step 1

Preheat oven to 325 degrees. Grease two glass loaf pans. Combine eggs, sugar, vanilla, and vegetable oil.
Add zucchini, and pineapple. In a separate bowl, combine flour, baking powder, baking soda, and cinnamon. Mix dry ingredients with wet ingredients. Fold in nuts. Bake until golden, about one hour, or until a toothpick inserted in the center comes out with some crumbs attached.
