Ingredients
- Spice it up or try these variations:
- 1 lb. ground beef (seasoned with salt,pepper, garlic powder)
- 3 or 4 cloves of chopped garlic
- 1/2 of medium onion (chopped)
- 6-8 whole (peeled & de-stemed) roasted green chiles (chopped how you like and use more if you like)
- 1 can pinto beans (rinsed)
- 32 oz. of chicken broth
- 5 or 6 potatoes diced
- Jalapeno
- Cilantro
- Rotel diced tomatoes
- Tomatoes
- Cumin (just a pinch)

Preparation
Step 1
Brown the seasoned ground beef. Once browned, add your garlic and onion and saute' until onion becomes translucent. Add your roasted, chopped green chiles and pinto beans. Add in the broth and then add potatoes. Simmer on med/low until the potatoes are cooked (approximately 30-45 min) or longer for stronger flavors.
