  • 1 cup sugar
  • 2 lightly beaten eggs
  • 1/2 cup soft butter
  • 2 cups flour
  • 2 teaspoons baking soda
  • 3 mashed bananas
  • using 4 bananas increases the yield
  • to 16 muffins

Preparation

Step 1

Preheat oven to 425 degrees. Place paper liners in muffin tins or grease the tins. Cream the sugar and butter. Add the eggs. In a separate bowl, combine the flour and baking soda. In another bowl, mash the bananas. Add the dry ingredients to the butter mixture. Fold in the mashed bananas. Bake 7 minutes, turn pan around halfway in oven, and bake another 5 minutes, or until golden brown.
