  • 1 cup bran flakes cereal
  • 2/3 cup wheat flour
  • 2/3 cup all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup orange juice
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup coarsely chopped dried fruit

Step 1

Preheat oven to 400 degrees. Spray muffin tins with canola oil. Combine bran flakes, wheat flour, white flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, combine orange juice, vegetable oil, and egg. Pour the wet mixture into a well in the center of the dry ingredients and mix together. Fold in the dried fruit. Bake 18 to 20 minutes, until golden brown.
