  • 1 16 oz. bag dried black beans
  • 1 packet from a two-packet box of Lipton Recipe Secrets beef and onion soup/dip mix
  • 5 cups water
  • 1/2 lb. smoked pork sausage
  • 1/2 each chopped carrot and celery
  • 1/2 t salt
  • 3 bay leaves
  • 1 14.5 oz. can crushed tomatoes
  • 2 t hot sauce
  • Garnish: chopped green onions

Step 1

Rinse and sort beans according to package directions. IN a large bowl, place beans, cover with water 2 inches above beans. Cover and let stand for 8 hours. Drain.

Stir together beans, soup mix, water, sausage, carrot, celery, salt and bay leaves. Cover and cook on low for 10 hours or until beans are tender. Remove and discard bay leaves.

In a blender or food processor, add 3 cups of the bean mixture and process until smooth. Remove sausage, chop into small pieces. Add sausage and pureed bean mixture to remaining bean mixture in crock pot. Stir in tomatoes and hot sauce. Garnish with green onions.
