Apple Spice Snack Cake

- 1 package spice cake mix (regular size)
- 1 can (21 ounces) apple pie filling
- 2 eggs
- 2 tablespoons canola oil

Step 1
In a large bowl, combine all the ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes.
Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 15 servings.

Definitely a 5 star recipe - only changes are to use a 1/2 c of non fat greek yogurt instead of the oil and to mix in half of the pie filling when doing the inital mixing and then adding the reserved amount just before putting in the pan to have some larger chunks. This is my go to recipe every fall. My kids have grown up on it and now they make it to share with their friends and familes. Now that my husband is starting to watch his cholesterol, I may sub 3 egg whites for the 2 whole eggs as well :)
This is so easy and delicious! My 13-year old son loved it. I also put in 1/2 cup chopped pecans and put a light powdered sugar glaze on it (1 c. powdered sugar, 1 T. milk, 1 t. vanilla.
Was short on time so made this cake for a potluck at work. A big hit, everyone wanted the recipe and no one could believe how simple and few ingredients it took. Thanks again TOH

I have been making this recipe for years now, everyone loves it and it is so simple to make if you need a quick dessert.
This cake is sooo simple and really very good. It's very moist...I made it two days ago and it's still very moist. It might be good with a little whipped cream or some ice cream, but it's very good all by itself! I got this recipe from Taste of Home's "44 Meals Under $10.
This is a moist, delicious and extremely simple to make cake. It's best with some Cool Whip.
Good easy cake. I think next time I would chop the pie filling into smaller bits and maybe use a bundt pan. I wasn't sure 2 Tablespoons of oil would make it moist enough, but it did. Thanks!
